Why does spicy food feel hot?

You bite into a chili and, in seconds, your mouth is on fire: it burns, your eyes water, maybe you sweat. It feels like real heat, but here’s the twist: nothing is actually burning you. The culprit: capsaicin
The compound responsible for the “heat” of chilies is called capsaicin. It’s found mainly in the white inner part of the chili (the placenta), where the seeds attach, not so much in the seeds themselves as many believe.
Capsaicin is odorless and tasteless. Its power lies elsewhere: in how it fools your body.
The great deception of the brain
Here’s the key. Capsaicin binds to a receptor in your mouth called TRPV1, whose real job is to detect heat and physical pain. It’s the same sensor that would warn you if you drank something scalding.
Capsaicin activates that receptor without any real heat. So it sends your brain the signal “this is hot, this burns!” even though the temperature hasn’t changed at all. Your brain, deceived, reacts as if you’d truly burned yourself: pain, sweating, watery eyes. As the Library of Congress notes, the burning of chili is a sensation of pain, not actual damage.
Why do we enjoy the pain?
If it’s painful, why do millions of people love it? The answer lies in the brain’s response. When it perceives that “pain,” the body releases endorphins and dopamine, natural chemicals that produce pleasure and well-being (a similar effect to the “runner’s high”).
So chili gives you a small rush: a harmless pain followed by a wave of pleasure. That mix can become almost addictive, and it explains why spice lovers keep seeking hotter and hotter foods.
Why milk cools better than water
A very practical trick: when your mouth is burning, water doesn’t help much. Why? Because capsaicin is an oily compound and doesn’t dissolve in water; drinking water just spreads it around.
The solution is milk or yogurt. They contain a protein called casein that surrounds and washes away the capsaicin, like a soap for grease. That’s why dairy calms the fire far better than a glass of water.
A measured heat: the Scoville scale
Not all chilies burn the same. The heat is measured with the Scoville scale, which ranks chilies by their capsaicin content, from a mild bell pepper (0 units) to extreme varieties with millions of units. It’s the “thermometer” of the spicy world.
